The North Platte Public Library Foundation participated in Soups and Hoops 2011. Soups and Hoops is a fundraiser sponsored by the Student Senate of Mid-Plains Community College and benefiting The Prairie Arts Center. The Platte River Mall was the location for the community to pay $5.00 per person and sample as many soups as they desired. As the sampling took place, the community was able to both live and silent bid on pottery and quilting crafts donated to the event. Samplers were encouraged to vote by colored ticket for the best booth and best soup. NPPL Foundation won the Best Soup Award while Linden Estates won the Best Booth Award. Here is our award winning soup, a tasty blend of comfort credited to Traci McKeon, NPPL Foundation Board member.
Tuscan Potato Soup
4 strips of bacon, chopped into small pieces
1 pound ground sausage
1 medium onion, diced
1/3 c. chopped celery (optional)
1 TBSP olive oil (any oil or butter will do)
1 tsp garlic, minced
4-6 large potatoes, roughly chopped
3 cans of chicken broth (14oz cans)
1 can water
1/2 tsp. red pepper flakes
1 cup of frozen chopped spinach (about 1/2 a package)
1 to 1 1/2 cups of heavy cream.
Fry up 4 the bacon until cooked (not necessarily crispy) in a stock pot.
Remove and place on paper towel.
Fry up sausage in bacon drippings.
Remove sausage and place on paper towel.
Drain grease from pan.
Add 1 TBSP olive oil, garlic and onion (and celery if you have it).
Cook until onions are just starting to turn translucent.
Add potatoes, chicken broth, and water.
Cook until potatoes are soft (approximately 20-30 minutes)
Add red pepper flakes and frozen spinach.
Do NOT salt-there is enough salt in the broth & bacon to flavor.
Stir until spinach has warmed and separated; then add sausage and bacon back into soup.
Simmer on low for about 5-10 minutes, then add 1 cup to 1 1/2 cup of heavy cream to finish.
Warm through and serve.
Do NOT bring soup back to a boil once the cream has been added.
Serve with crusty Italian bread and enjoy!
